Carrots

Carrots are not just for rabbits! In fact, they are a top favorite vegetable for children, adults, and even cats or dogs! You can enjoy them raw as a delicious, crunchy snack or shredded to make a multiple variety of salads or toppings. They also make a perfect soup ingredient when cooked, or you can enjoy them as a side vegetable when you roast them. Not to mention you can use them to make delicious muffins or “carrot cake” oatmeal.

As versatile as they are, they also provide fantastic nutrition. The top nutrient for orange carrots is beta-carotene, the precursor of vitamin A. To enhance your absorption of beta-carotene, eat your carrots with a healthy source of fat like avocado or sunflower seeds. Cooking your carrots enhances absorption of this nutrient as well.

Carrots are also rich in vitamin K, vitamin B6, fiber, and potassium. With all these nutrients, carrots are great for our heart, our bones, our eyes, our muscles, our digestion, and they have strong antioxidant and anti-inflammatory powers.
